Culinary Profile

Pacific Cod flesh is lean - bright white - thick - slightly firm with a delicate texture and offers an excellent flaking quality. The flavour is very mild – with an edge of sweetness and a high moisture content.

Description

This bottom-dwelling species is a Groundfish and is similar in appearance to Atlantic Cod. Its body is coloured brownish red to grey or black – belly shading grey to white. This fish has a pale lateral line along both sides of its body. Both Cod species have a distinctive barbell on the end of their lower jaw. Pacific Cod are usually about 60 cm in length and grow to be 7 to 8 pounds.

Habitat

Pacific Cod are found along the continental shelf at depths of up to 3,000 feet. Indigenous to the North Pacific Ocean - Pacific Cod can be found in the Aleutian and Pribiloff Islands – throughout the coasts of British Columbia, Washington and Oregon and also off the coasts of Japan and China.

Pacific Cod populations are healthy - however, certain methods of catch may cause environmental damage and degradation. Management practices are in place to reduce environmental harm – resulting in Pacific Cod being hailed as one of the best-managed fisheries in the world.
