Culinary Profile

Sole & Flounder flesh is lean, creamy white and offers a very thin fillet. When cooked - the flesh is flakey and has a mild flavour.

Description

Similar to other members of the Flatfish Family - Rex Sole have eyes on the same side of their head. Rex Sole have a thin, elongated body and can grow to be 4.4 pounds.

Habitat

Rex Sole live on muddy bottoms at depths up to 3,000 feet. This Flatfish is a Pacific Ocean species found along the entire North American Coast. The main commercial source of Rex Sole is the US - particularly in Alaskan and Oregon waters.

Sustainability Status

Sole & Flounder populations are not considered depleted, but the common method of catch is bottom trawling - which has significant bycatch and habitat degradation concerns. Rex Sole populations in Alaska are considered healthy.

Fishy Fact: Rex Sole are small and therefore difficult to fillet. For this reason - they are often sold “rexed” – head off and gutted.
