Flesh & Flavour: Sole & Flounder flesh is lean - creamy white and offers a very thin fillet. When cooked - the flesh is flakey and has a mild flavour. Arrowtooth flesh is extremely delicate and can fall apart if it is not cooked carefully.

Similar to other members of the Flatfish Family - Arrowtooth Flounder have eyes on the same side of their head. This Flatfish is brownish in colour and has a large mouth. Relative to other Sole & Flounder species - Arrowtooth Flounder are considered large - growing to be between 2 and 3 feet long.

Arrowtooth Flounder are native to the Pacific Ocean - ranging as far south as Northern California and as far north as the Bering Sea. In the summer - Arrowtooth Flounder reside at depths up to 160 feet - where as in the winter they prefer deeper waters - sometimes residing at depths up to 1,640 feet.

Sole & Flounder populations are not considered depleted - but the common method of catch is bottom trawling - which has significant bycatch and habitat degradation concerns. Arrowtooth Flounder populations are healthy and no overfishing is occurring.
